ColorEditor should be very straightforward to use. You can change the colors used by the editor in the preferences.

JEdit Syntax Files

The modes used by ColorEditor were copied verbatim from jEdit. So if you want to upgrade to a new version of jEdit’s modes just replace the mode directory.

The only place I could find up-to-date information on jEdit’s modes was in jEdit’s documentation, which can be found here. Editing the various mode.xml files are mostly straightforward.
